VACANT POSITION: F&B Manager/Chef/Duty Manager
LOCATION: Principe Island
PROPERTY TYPE: Boutique Hotel
SALARY: €1200 per month depending on experience + accommodation & 2 return flights per year.
REPORTS TO: General Manager
We are a small boutique hotel with situated on the magnificent rainforested island of Principe in West Africa, looking for an
optimistic & energetic food and beverage manager with cooking experience/capabilities to be responsible for managing all F&B
operations, and delivering an excellent guest experience. The candidate should be enthusiastic, energetic, a team player with an
open mind and have cultural sensitivity.
We are looking to uplift the quality and standards in terms of the food offering, with new menus being implemented, as well as
new systems of procurement and stock control. The prospective employee will also be very involved with guests – hosting them
before meals, checking up on them, ensuring that they enjoy their stay, so should sincerely care about the guests as first priority.
He/She will help out with general management of the property in the absence of the GM, so should be flexible and multi-skilled
- it is a small hotel so some overlapping of duties can be expected.
The successful candidate will be able to plan ahead and manage the kitchen staff & cooks, as well as the restaurant staff, and the
operations with venue rotation (beach lunches, pool dinners, picnics in the forest etc.). The goal is to maximize revenue through
customer satisfaction, proper food utilisation/stock procurement/rotation, wastage management and employee training.
He/She should be able to delegate tasks to kitchen staff to ensure meals are prepared in a timely manner, and to have a
consistent product throughout, and to ensure the hygiene standards of the kitchen is kept up.
? Manage all F&B and day-to-day operations within budgeted guidelines and to the highest standards, jumping in to help
with the plating/presentation of new dishes and ensuring the quality of meals leaving the kitchen
? Preserve and expand on excellent levels of internal and external customer service
? Design & implement exceptional menus (in collaboration with the GM) using local ingredients and providing an
authentic gastronomical experience, while maintaining a western approach to food standards and trends.
? Control the procurement/purchasing procedures and continuously make necessary improvements
? Identify customers’ needs and respond proactively to all of their requests
? Lead F&B team by continuously training and appraising talented personnel in a positive manner
? Implement targets, KPI’s, schedules, policies and procedures
? Provide a two way communication and nurture an ownership environment with emphasis in motivation and teamwork
? Comply with all health and safety regulations
? Proven food and beverage management experience
? Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
? Ability to spot and resolve problems efficiently
? Communication and leadership skills
? Up to date with food and beverages trends and best practices
? Ability to manage personnel and meet financial targets
? Guest-oriented and service-minded
? Proficient in English, Portuguese an advantage
? Hands-on approach – not to manage from an office but from the floor
